Blueberry Vinaigrette

Another Delicious Blueberry Food Creation!!

And God said, Let the earth bring forth grass, the herb yielding seed, and the fruit tree yielding fruit after his kind, whose seed is in itself, upon the earth: and it was so.
Genesis 1:11

Place the ingredients in your Vitamix, blender, Nutribullet, or food processor in the order listed.

1/2 cup Blueberries, fresh or frozen (if frozen, let thaw so they don't cause your dressing to harden)
1/2 cup Balsamic Vinegar ( I used Peach infused White Balsamic! YUMMO!!)
2 Tablespoons Pure Maple Syrup
1/2 teaspoon Dry Mustard
1/4 teaspoon Sea Salt
Dash of pepper
1/2 cup oil

 Blend on medium until blueberry skins are finely chopped, about 25 seconds.  Serve right away or chill.

Blueberry Muffin

Oh boy, have I been having fun with all the fresh fruits and vegetables available at the farm stands around our house lately!  Fresh corn, green beans, berries, potatoes....I could go on and on!  All this fresh produce makes me want to get in my kitchen and create!!  The last two weeks I have concentrated my effort on blueberry muffins and after combining several recipes, cutting the sugar content, and making a couple of substitutions in the "more healthful" options; I have come up with our absolute favorite Blueberry Muffin!  Enjoy and feel free to let me know any changes that you made to the recipe to make it better or tastier for your family!

 Oven Temperature: 375 degrees  Bake: 18 Minutes  Yield: 8 Muffins

I use muffin papers as I am very lazy and HATE cleaning out my muffin tins!  You don't have to use paper, just spray the muffin pans.  This recipe makes 18 medium muffins.  It helps with the calorie count, which is 92 calories a muffin.

Stir the sugar into the coconut oil until the sugar dissolves.  
1/2 cup Coconut Oil (I microwave 10 seconds to make sure it is liquid)
1/4 cup Sugar

Then add the rest of the liquid ingredients and set aside.
2 large Eggs - Room temperature.  If you are like me and you want to make this recipe spur of the moment, just put your eggs in a bowl and run tepid, NOT HOT, water over them while you get the dry ingredients together.
1/2 cup Almond Milk
1 teaspoon Vanilla
1 tablespoon Lemon Juice (fresh or concentrate)

Mix the dry ingredients and make a well in the middle.
2 cups Flour
1/2 teaspoon Salt
2 teaspoons Baking Powder
1/2 teaspoon Baking SODA
1/2 teaspoon Cinnamon
1/4 teaspoon Cardamom
1/8 teaspoon fresh ground Nutmeg
Zest from 1 Lemon

Pour the liquids into the dry ingredients and stir just until mixed.  Add:
1 1/2 cup of fresh blueberries or frozen that are a little thawed.

I use an ice cream scoop with a trigger to put the thick batter into the cups.

Last, but definitely not unimportant, the crumb topping:
1/4 cup Brown Sugar
1/4 cup White Sugar
2 tablespoons Flour
1/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/8 teaspoon Cardamom
2 tablespoons Coconut Oil

Sprinkle a little on the top of each muffin and bake.

Mayonnaise and a New Change to My Blog

On Sunday I swallowed my last cancer pill. On Monday I had my last oncology appointment.  This left me in a quandary about what to do with my blog.  Wednesday night after church, we stopped by a friends to drop something off and share a new scone and hummus recipe I have been working on.  She made a comment about maybe I should write these recipes on my blog!  What a great idea!!  I decided that I would also try my hand at making a video.

Mayonnaise is the recipe of the day!  I LOVE homemade Mayo and it is so easy to make.  There are some pitfalls and I have ended up wasting oil and eggs making this delectable concoction!!  I hope this video helps.


3 whole eggs (or 5 store bought yoke only)
1 1/4 teaspoon Dry Mustard
1 1/2 teaspoon Sea Salt
1/4 cup Lemon Juice

Set Aside:
1 3/4 cups Oil (I use Avocado Oil)

Place first 4 ingredients into the Vitamix or blender in the order listed, reserving the Oil.  Blend the first ingredients and slowly add oil.  It will thicken even more as it chills.

Today I say goodbye to a little white pill.  I am glad to state that I am NOT sorry to say goodbye.  The Lord brings things into our lives that are necessary, but definitely NOT fun or even wanted.  I would not have asked for cancer, surgery, chemo, and the little white pill;

....but God.  


He knew it would grow me in ways that I could never imagine.  He knew it would refine my life.  He knew it would take me to a place of "Unfamiliar Grace" that few people get to experience.  I will NOT miss this little white pill and I am very happy to be parting from it.  However, I am ever so thankful for the new awareness of life this last 5 1/2 years has brought me.  I am thankful for HIS wonderful grace. 

O taste and see that the LORD is good: blessed is the man that trusteth in him.  Psalms 34:8  

These last few years I did "taste" and I did "see" that the LORD is good!  If it took the little white pill to help with that journey, thank you LORD!  Let me encourage you to take on this challenge!!  I am blessed for having trusted in HIM and you will be too!!!
